It is a food additive based on a pure carrageenan, standardised to provide uniform gel strength in water. Carrageenan (E-407) is a natural hydrocolloid extracted from red algae of the class Rhodophyceae. It is presented as an odourless and tasteless beige powder.

How to use

Dissolve the liquid or product to be gelled at cold temperature and boil it to activate the Iota. For iota carrageenan to hydrate properly, it must be above 70°C / 158°F. Iota carrageenan does not hydrate well with sugar, so sugar should be added once the hydration process is complete.


Dissolution

The more iota carrageenan used, the firmer the gel will become. Generally, a percentage of 0.75% to 1.5% iota carrageenan is used for gels. For dairy gels, 0.4% to 1.5% iota carrageenan is often used. Iota carrageenan foams use 0.2% to 1.0% gels. For thickening dairy liquids, a ratio of 0.02% to 0.04% is often used.
