Xanthan gum (E 415) is a high molecular weight polysaccharide produced by fermentation of glucose with a pure culture of Xanthomonas campestris. Soluble in water. Insoluble in ethanol. High resistance to pH variations. It acts in alcoholic media and is compatible with different salinities.
It is presented in the form of fine cream-colored powder. Soluble in water. Insoluble in ethanol.

Applications:

Xanthan gum is used as a stabiliser, thickener, emulsifier and gelling agent (in binary systems with locust bean gum forming elastic gels). Its pseudoplastic character, high resistance to pH and temperature variations and compatibility with most salts present in food makes it suitable for use in juices, beverages, dressings, dairy products, sauces, confectionery, syrups...

0.8 - 5 g / kg

Dispersion
Sprinkle the amount of Xanthan gum to be used on top of one liter of liquid. Shake with a blender until it thickens. Dissolves both hot and cold. Thickens all kinds of sauces without making them opaque. It does not lose its thickening properties even if temperature is applied.
*Note: in acidified aqueous solution its gelling capacity decreases.
