It can be used as an antioxidant and preservative, helping to prevent the oxidation of fruits and vegetables. In baked goods, it acts as a dough improver, strengthening the gluten protein network.
Recommended Dosages
Use between 0.05% and 0.1%. For antioxidant baths for fruits and vegetables, use between 3% and 5%.

Shelf life
