    Applications

    Allows the creation of foams based on mixtures containing a fatty part. For example: fresh cheeses, chocolates, some fruits, foie gras, seafood or vegetables.

    Indicative doses
    Use 50-100 g/kg.

    How to use

    Heat the liquid mixture, dissolve the recommended dosage with a blender. Introduce the mixture into the siphon and place the gas charge. It can be kept in a bain-marie or warm cupboard until use.

    Ingredients

    EGG albumin ( EGG albumin and foaming agent: E 1505), maltodextrin, emulsifiers: E 472a and E 471, glucose syrup, refined vegetable oil (palm, palm kernel), thickeners: E 410, E 412, E 407 and E 415 and MILK protein.

    Contains EGG and MILK. May contain traces of SOY.

    Shelf life of 18 months from the date of production of the raw material. Store in a cool and dry place, keeping the container closed and preserving it from light.
