It is a food additive based on a pure carrageenan, standardized to provide a uniform gel strength in water. Carrageenan (E 407) is a natural hydrocolloid extracted from red algae. It gels at 48 ºC and withstands a vex gelled temperature up to 70 ºC. Transparent and firm. Gelling capacity is reduced in acidic media.

Applications:
This gel can be used for thickening purees, napado products and hot gelatins. It can also be used to develop cooked meat products.
How to use
Dispersion
Dispersible when cold and totally soluble above 70ºC.
Insoluble in vegetable and mineral oils and organic solvents.
Dissolving
Pour the powder (previously mixed with the other dry ingredients) over the water, while stirring vigorously until completely dispersed.
Heat until completely dissolved (70 - 80ºC). Do not pour the liquid over the powder.
A transparent, firm, brittle, thermo-reversible gel forms.
Gelling occurs when the solution cools down. In an acidic medium the gelling capacity is reduced.

Use 2-15 g/L
Storage conditions
Shelf life of 2 years under the specified storage conditions. Store in tightly closed container in a cool, dry place.
